Join us and the 11 other wineries in the West Elks AVA, as we celebrate the start of the season during the annual North Fork Uncorked weekend. We're thrilled to release our first two sparkling wines at two identical culinary pop-up events here at our tasting room, hosted by Bonfire Oyster Co. and Best Slope Culinary, featuring two days of poke bowls and freshly shucked oysters.

The Wine

This fully sparkling wine, made from 100% estate-grown Riesling, is lively on the palate, with notes of white peach, nectarine, and lime zest. Its fine mousse and lingering finish make it both the perfect celebratory wine and the go-to choice for oyster, poke, soft shell crab, or any array of fresh seafood.

We worked with our friends at Big B's Delicious Orchards to obtain the freshly pressed juice from three different local, organic apple varieties. We fermented equal parts of this juice and our estate-grown Riesling, for a bone-dry, zero-dosage, fully sparkling wine that shows notes of crisp apple, tart peach, and delicate orchard flowers.

The Food

We're excited to host Bonfire Oyster Co. for our sparkling wine release party, as oysters are the perfect match with dry, crisp, sparkling wine. This wandering raw bar features high-quality oysters, harvested straight from their waters to Colorado.

If you've experienced Chef Brandt's poke bowl presentation, you know what you're in for – fresh, vibrant, and layered with umami-packed flavor. Brandt mixes pickled and fresh veg, ahi sesame poke, fluffy rice, and a solid mix of spice.
