Join us and the 13 other wineries in the West Elks AVA, as we celebrate the start of the season during the annual North Fork Uncorked weekend. We're thrilled to share two new wines all weekend long, host Chefs Dan and Ana for Mangia! on Friday, and debut our sparkling wine at two identical culinary pop-up events, hosted by Bonfire Oyster Co. and Best Slope Culinary, featuring back-to-back days of poke bowls, lobster rolls, and freshly shucked oysters.

A visit to the North Fork Valley over the West Elks Wine Trail weekend wouldn't be complete without coming over for dinner on a Friday night. Chefs Dan and Ana Geltz are serving up small plates, featuring locally sourced ingredients with a focus on Italian cuisine. Whether you're craving a pre-supper snack or a full-on dinner experience, we've got you covered!

Friday, June 5

Chef Brandt Bishop of Best Slope Culinary, along with Bonfire Oyster Co., are here for a late-afternoon and early evening pop-up. Brandt is returning with his legendary poke bowls and seasonal sides, which pair perfectly with Bonfire Oyster Co.'s freshly shucked oysters and lobster rolls. The pairing of these two food trucks here at the winery is a perfect match with our seasonally appropriate, crisp white, rosé, and sparkling wines.

Saturday, June 6

If you can't make it over on Saturday, you're in luck because we're hosting round TWO with Chef Brandt Bishop of Best Slope Culinary, along with Bonfire Oyster Co.. They're back here for a late-afternoon and early evening pop-up.  The wineries of the North Fork Valley invite you to come to Paonia and Hotchkiss to enjoy a fun-filled weekend of culinary events, wine and cider, music, and barrel tastings to celebrate the beginning of the 2026 summer season. New releases of limited-production wines will be available for tasting and purchase.
